2、表面活性和表面活性劑
將能降低溶劑表面張力的性質(zhì)稱為表面活性,而具有表面活性的物質(zhì)稱為表面活性物質(zhì)。
把能在水溶液中分子發(fā)生締合且形成膠束等締合體,并具有較高的表面活性,同時(shí)還具有潤(rùn)濕﹑乳化﹑起泡﹑洗滌等作用的表面活性物質(zhì)稱為表面活性劑。
3、表面活性劑的分子結(jié)構(gòu)特點(diǎn)
表面活性劑是一種具有特殊結(jié)構(gòu)和性質(zhì)的有機(jī)化合物,它們能明顯地改變兩相間的界面張力或液體(一般為水)的表面張力,具有潤(rùn)濕﹑起泡﹑乳化﹑洗滌等性能。
就結(jié)構(gòu)而言,表面活性劑都有一個(gè)共同的特點(diǎn),即其分子中含有兩種不同性質(zhì)的基團(tuán),一端是長(zhǎng)鏈非極性基團(tuán),能溶于油而不溶于水,亦即所謂的疏水基團(tuán)或憎水基,這種憎水基一般都是長(zhǎng)鏈的碳?xì)浠衔?,有時(shí)也為有機(jī)氟﹑有機(jī)硅﹑有機(jī)磷﹑有機(jī)錫鏈等。另一端則是水溶性的基團(tuán),即親水基團(tuán)或親水基。親水基團(tuán)必須有足夠的親水性,以保證整個(gè)表面活性劑能溶于水,并有必要的溶解度。由于表面活性劑含有親水基和疏水基,因而它們至少能溶于液相中的某一相。表面活性劑的這種既親水又親油的性質(zhì)稱為兩親性。
4、表面活性劑的類型
表面活性劑是一種既有疏水基團(tuán)又有親水基團(tuán)的兩親性分子。表面活性劑的疏水基團(tuán)一般是由長(zhǎng)鏈的碳?xì)錁?gòu)成,如直鏈烷基C8~C20,支鏈烷基C8~C20,烷基苯基(烷基碳原子數(shù)為8~16)等。疏水基團(tuán)的差別主要是在碳?xì)滏湹慕Y(jié)構(gòu)變化上,差別較小,而親水基團(tuán)的種類則較多,所以表面活性劑的性質(zhì)除與疏水基團(tuán)的大小﹑形狀有關(guān)外,主要還與親水基團(tuán)有關(guān)。親水基團(tuán)的結(jié)構(gòu)變化較疏水基團(tuán)大,因而表面活性劑的分類一般以親水基團(tuán)的結(jié)構(gòu)為依據(jù)。這種分類是以親水基團(tuán)是否是離子型為主,將其分為陰離子型﹑陽(yáng)離子型﹑非離子型﹑兩性離子型和其他特殊類型的表面活性劑。
5、表面活性劑水溶液的特性
① 表面活性劑在界面上的吸附
表面活性劑分子中具有親油基和親水基,為兩親分子。水是強(qiáng)極性液體,當(dāng)表面活性劑溶于水中時(shí),根據(jù)極性相似相引﹑極性相異相斥原理,其親水基與水相引而溶于水,其親油基與水相斥而離開水,結(jié)果表面活性劑分子(或離子)吸附在兩相界面上,使兩相間的界面張力降低。表面活性劑分子(或離子)在界面上吸附越多,界面張力降低越大。
② 吸附膜的一些性質(zhì)
吸附膜的表面壓力:表面活性劑在氣液界面吸附形成吸附膜,如在界面上放置一無(wú)摩擦可移動(dòng)浮片,以浮片沿溶液面推動(dòng)吸附質(zhì)膜,膜對(duì)浮片產(chǎn)生一壓力,此壓力稱為表面壓力。
表面黏度:與表面壓力一樣,表面黏度是由不溶性分子膜表現(xiàn)出的一種性質(zhì)。以細(xì)金屬絲懸吊一白金環(huán),令其平面接觸水槽的水表面,旋轉(zhuǎn)白金環(huán),白金環(huán)受水的黏度阻礙,振幅逐漸衰減,據(jù)此可測(cè)定表面黏度,方法是:先在純水表面進(jìn)行實(shí)驗(yàn),測(cè)出振幅衰減,然后測(cè)定形成表面膜后的衰減,從兩者的差值求出表面膜的黏度。
表面黏度與表面膜的牢固度密切有關(guān),由于吸附膜有表面壓力和黏度,它必定具有彈性。吸附膜的表面壓力越大,黏度越高,其彈性模量就越大。表面吸附膜的彈性模量在穩(wěn)泡過(guò)程中有重要意義。
③ 膠束的形成
表面活性劑的稀溶液服從理想溶液所遵循的規(guī)律。表面活性劑在溶液表面的吸附量隨溶液濃度增高而增多,當(dāng)濃度達(dá)到或超過(guò)某值后,吸附量不再增加,這些過(guò)多的表面活性劑分子在溶液內(nèi)是雜亂無(wú)章的,抑或以某種有規(guī)律的方式存在。實(shí)踐和理論均表明,它們?cè)谌芤簝?nèi)形成締合體,這種締合體稱為膠束。
臨界膠束濃度:表面活性劑在溶液中形成膠束的最低濃度稱為臨界膠束濃度。

6、親水親油平衡值
HLB是hydrophile lipophile balance的縮寫,表示了表面活性劑的親水基團(tuán)和親油基團(tuán)具有的親水親油平衡值,即表面活性劑HLB值。HLB值大,表示分子的親水性強(qiáng),親油性弱;反之親油性強(qiáng),親水性弱。
① HLB值的規(guī)定
HLB值是個(gè)相對(duì)值,故在制定HLB值時(shí),作為標(biāo)準(zhǔn),規(guī)定無(wú)親水性能的石蠟的HLB值為0,而水溶性較強(qiáng)的十二烷基硫酸鈉的HLB值為40。因此表面活性劑的HLB值一般在1~40范圍以內(nèi)。通常來(lái)說(shuō),HLB值小于10的乳化劑為親油性的,而大于10的乳化劑則是親水性的。因此,由親油性到親水性的轉(zhuǎn)折點(diǎn)約為10。
根據(jù)表面活性劑的HLB值,可大致了解其可能的用途,如表所示。

兩種互不溶的液體,一種以微粒(液滴或液晶)分散于另一種中形成的體系稱為乳狀液。形成乳狀液時(shí)由于兩液體的界面積增大,所以這種體系在熱力學(xué)上是不穩(wěn)定的,為使乳狀液穩(wěn)定需要加入第三組分—乳化劑以降低體系的界面能。乳化劑屬于表面活性劑,其主要功能是起乳作用。乳狀液中以液滴存在的那一相稱為分散相(或內(nèi)相﹑不連續(xù)相),連成一片的另一相叫做分散介質(zhì)(或外相﹑連續(xù)相)。
①乳化劑和乳狀液
常見的乳狀液,一相是水或水溶液,另一相是與水不相混溶的有機(jī)物,如油脂﹑蠟等。水和油形成的乳狀液,根據(jù)其分散情形可分為兩種:油分散在水中形成水包油型乳狀液,以O(shè)/W(油/水)表示:水分散油中形成油包水型乳狀液,以W/O(水/油)表示。此外還可能形成復(fù)雜的水包油包水W/O/W型和油包水包油O/W/O型的多元乳狀液。
乳化劑是通過(guò)降低界面張力和形成單分子界面膜使乳狀液穩(wěn)定的。
在乳化作用中對(duì)乳化劑的要求:a:乳化劑必須能吸附或富集在兩相的界面上,使界面張力降低;b:乳化劑必須賦予粒子以電荷,使粒子間產(chǎn)生靜電排斥,或在粒子周圍形成一層穩(wěn)定的﹑黏度特別高的保護(hù)膜。所以,用作乳化劑的物質(zhì)必須具有兩親基團(tuán)才能起乳化作用,表面活性劑能滿足這種要求。
②乳化液的制備方法和影響乳狀液穩(wěn)定性的因素
制備乳狀液的方法有兩種:一種是采用機(jī)械法使液體以微小的粒子分散于另一種液體中,工業(yè)上多采用這種方法制備乳狀液;另一種是將液體以分子狀態(tài)溶于另一液體中,然后使其適當(dāng)?shù)鼐奂纬扇闋钜骸?/span>
乳狀液的穩(wěn)定性是指反抗粒子聚集而導(dǎo)致相分離的能力。乳狀液在熱力學(xué)上是不穩(wěn)定的體系,有較大的自由能。因此所謂乳狀液的穩(wěn)定性實(shí)際上是指體系達(dá)到平衡狀態(tài)所需要的時(shí)間,即體系中一種液體發(fā)生分離所需要的時(shí)間。
當(dāng)界面膜中有脂肪醇﹑脂肪酸和脂肪胺等極性有機(jī)物分子時(shí),膜強(qiáng)度顯著增高。這是因?yàn)?,在界面吸附層中乳化劑分子與醇﹑酸和胺等極性分子發(fā)生作用形成“復(fù)合物”,使界面膜強(qiáng)度增高的緣故。
由兩種以上表面活性劑組成的乳化劑稱為混合乳化劑?;旌先榛瘎┪皆谒?油界面上,分子間發(fā)生作用可形成絡(luò)合物。由于分子間強(qiáng)烈作用,界面張力顯著降低,乳化劑在界面上吸附量顯著增多,形成的界面膜密度增大,強(qiáng)度增高。
液珠的電荷對(duì)乳狀液的穩(wěn)定性有明顯的影響。穩(wěn)定的乳狀液,其液珠一般都帶有電荷。當(dāng)使用離子型乳化劑時(shí),吸附在界面上的乳化劑離子其親油基插入油相,親水基處于水相,從而使液珠帶電。由于乳狀液的液珠帶同種電荷,它們之間相互排斥,不易聚結(jié),使穩(wěn)定性增高??梢?,液珠上吸附的乳化劑離子越多,其帶電量越大,防止液珠聚結(jié)能力也越大,乳狀液體系就越穩(wěn)定。
乳狀液分散介質(zhì)的黏度對(duì)乳狀液的穩(wěn)定性有一定影響。一般,分散介質(zhì)的黏度越大,乳狀液的穩(wěn)定性越高。這是因?yàn)榉稚⒔橘|(zhì)的黏度大,對(duì)液珠的布朗運(yùn)動(dòng)阻礙作用強(qiáng),減緩了液珠之間碰撞,使體系保持穩(wěn)定。通常能溶于乳狀液的高分子物質(zhì)均能增高體系的黏度,使乳狀液的穩(wěn)定性增高。此外高分子還能形成堅(jiān)固的界面膜,使乳狀液體系更加穩(wěn)定。
在某些情況下加入固體粉未也能使乳狀液趨于穩(wěn)定。固體粉未處于水﹑油中或界面上,取決于油﹑水對(duì)固體粉未的潤(rùn)濕能力,若固體粉未完全為水潤(rùn)濕,又能被油潤(rùn)濕,才會(huì)滯留于水油界面上。
固體粉未使乳狀液穩(wěn)定的原因在于,聚集于界面的粉未增強(qiáng)了界面膜,這與界面吸附乳化劑分子相似,故固體粉未料子在界面上排列得越緊密,乳狀液越穩(wěn)定。
表面活性劑在水溶液中形成膠束后具有能使不溶或微溶于水的有機(jī)物的溶解度顯著增大的能力,且此時(shí)溶液呈透明狀,膠束的這種作用稱為增溶。能產(chǎn)生增溶作用的表面活性劑叫做增溶劑,被增溶的有機(jī)物稱為被增溶物。
8、泡沫
泡沫在洗滌過(guò)程中起著重要的作用。泡沫是指氣體分散在液體或固體中的分散體系,氣體為分散相,液體或固體為分散介質(zhì),前者稱為液體泡沫,而后者稱為固體泡沫,如泡沫塑料,泡沫玻璃,泡沫水泥等。
(1) 泡沫的形成
我們這里所說(shuō)的泡沫,是指被液體薄膜隔開的氣泡的聚集物。這種泡沫由于分散相(氣體)和分散介質(zhì)(液體)的密度相差較大,加之液體的黏度低,因此氣泡總是能很快地升到液面。
形成泡沫的過(guò)程是將大量氣體帶入液體,液體中的氣泡又很快返回到液面,形成由少量液氣隔開的氣泡聚集體
泡沫在形態(tài)上具有兩個(gè)顯著的特點(diǎn):其一是作為分散相的氣泡常常是呈多面體形狀,這是因?yàn)樵跉馀莸南嘟惶?,有一種液膜變薄的趨勢(shì)使氣泡成為多面體,當(dāng)液膜變薄到一定程度,則導(dǎo)致氣泡破裂;其二是,純凈液不能形成穩(wěn)定的泡沫,能形成泡沫的液體,至少是兩個(gè)以上的組分。表面活性劑的水溶液是典型的易產(chǎn)生泡沫的體系,其生成泡沫的能力與其他性能也有一定的關(guān)系。
起泡力好的表面活性劑稱為起泡劑。起泡劑盡管具有良好的泡沫能力,但形成的泡沫不一定能維持較長(zhǎng)的時(shí)間,即其穩(wěn)定性不一定良好。為了保持泡沫的穩(wěn)定,常在起泡劑中加入能增加泡沫穩(wěn)定性的物質(zhì),這種物質(zhì)稱為穩(wěn)泡劑,常用的穩(wěn)泡劑有月桂酰二乙醇胺和十二烷基二甲基胺的氧化物。
(2) 泡沫的穩(wěn)定性
泡沫是一種熱力學(xué)不穩(wěn)定體系,最后的趨勢(shì)是破泡之后體系內(nèi)液體的總表面積減小,自由能降低。消泡過(guò)程就是隔開氣體的液膜由厚變薄,直至破裂的過(guò)程。因此,泡沫的穩(wěn)定程度主要是由排液快慢和液膜的強(qiáng)度決定的。其影響因素還有以下幾種。
①表面張力
從能量觀點(diǎn)考慮,低表面張力對(duì)于泡沫的形成比較有利,但不能保證泡沫穩(wěn)定。表面張力低,壓差小,排液速度變慢,液膜變薄較慢,有利于泡沫的穩(wěn)定。
②表面黏度
決定泡沫穩(wěn)定性的關(guān)鍵因素在于液膜強(qiáng)度,而液膜強(qiáng)度主要決定于表面吸附膜的堅(jiān)固性,以表面黏度為其量度。實(shí)驗(yàn)證明,表面黏度較大的溶液所生成的泡沫壽命較長(zhǎng)。這是因?yàn)楸砻嫖椒肿娱g的相互作用導(dǎo)致膜強(qiáng)度增大,從而提高泡沫的壽命。
③溶液黏度
當(dāng)液體本身的黏度增大時(shí),液膜中的液體不易排出,液膜厚度變薄的速度較慢,延緩了液膜破裂的時(shí)間,增加了泡沫的穩(wěn)定性。
④表面張力的“修復(fù)”作用
表面活性劑吸附于表面的液膜,有反抗液膜表面擴(kuò)張或收縮的能力,我們將這一能力稱為修復(fù)作用。這是因?yàn)橛斜砻婊钚詣┰诒砻嫔衔降囊耗?,擴(kuò)張其表面積將降低表面吸附分子的濃度,增大表面張力。進(jìn)一步擴(kuò)大表面將需要做更大的功。反之表面積收縮將增加表面吸附分子的濃度,即減小表面張力,不利于進(jìn)一步的收縮。
⑤氣體通過(guò)液膜的擴(kuò)散
由于毛細(xì)壓力的存在,泡沫中小泡的壓力要比大泡壓力高,會(huì)造成小泡中的氣體透過(guò)液膜擴(kuò)散到低壓的大泡中,造成小泡變小,大泡變大,最終泡沫破裂的現(xiàn)象。如果加入表面活性劑,發(fā)泡時(shí)則可使泡沫均勻細(xì)密,不易消泡。由于表面活性劑緊密排列在液膜上,透氣困難,而使泡沫更加穩(wěn)定。
⑥表面電荷的影響
如果泡沫液膜帶有相同符號(hào)的電荷,液膜兩個(gè)表面將互相排斥,防止了液膜變薄乃至破壞。離子型表面活性劑可起這種穩(wěn)定作用。
綜上所述,液膜強(qiáng)度是決定泡沫穩(wěn)定性的關(guān)鍵因素。作為起泡劑和穩(wěn)泡劑的表面活性劑,其表面吸附分子排列的緊密性和牢固性是最重要的因素。表面吸附分子相互作用強(qiáng)時(shí),吸附分子排列結(jié)構(gòu)緊密,這不僅使表面膜本身具有較高的強(qiáng)度,而且因表面黏度較高使鄰近表面膜的溶液不易流動(dòng),液膜排液相對(duì)困難,液膜的厚度易于維持。此外,排列緊密的表面分子還能減低氣體分子的透過(guò)性從而也可增加泡沫的穩(wěn)定性。
(3) 泡沫的破壞
破壞泡沫的基本原則就是改變產(chǎn)生泡沫的條件或消除泡沫的穩(wěn)定因素,因而有物理和化學(xué)兩種消泡方法。
物理消泡就是在維持泡沫溶液的化學(xué)成分不變的情況下改變泡沫產(chǎn)生的條件,如外力的擾動(dòng)﹑溫度或壓力的改變以及超聲處理等都是消除泡沫的有效物理方法。
化學(xué)消泡法是加入某些物質(zhì)與起泡劑發(fā)生作用,降低泡沫中液膜的強(qiáng)度進(jìn)而降低泡沫的穩(wěn)定性以達(dá)到消泡的目的,這樣的物質(zhì)稱為消泡劑。消泡劑大多數(shù)為表面活性劑。因此根據(jù)消泡的作用機(jī)理,消泡劑應(yīng)當(dāng)具有較強(qiáng)的降低表面張力的能力,容易吸附在表面上,且表面吸附分子間的相互作用較弱,吸附分子排列結(jié)構(gòu)較為疏松。
消泡劑的種類多種多樣,但基本上都為非離子表面活性劑。非離子表面活性劑在其濁點(diǎn)附近或濁點(diǎn)以上時(shí)具有防泡性能,常用作消泡劑。醇類,特別是有分支結(jié)構(gòu)的醇﹑脂肪酸及脂肪酸酯﹑多酰胺﹑磷酸酯﹑硅油等也是常用的優(yōu)良消泡劑。
(4) 泡沫與洗滌
泡沫與洗滌作用并沒(méi)有直接的聯(lián)系,泡沫量的多少并不表示洗滌效果的好壞。例如非離子表面活性劑的起泡性能遠(yuǎn)不如肥皂,但其去污力卻比肥皂優(yōu)異得多。
在某些情況下,泡沫在去除污垢方面還是有幫助的。例如:家庭洗滌餐具時(shí),洗滌液的泡沫可以將洗下來(lái)的油滴帶走;擦洗地毯時(shí),泡沫有助于帶走塵土﹑粉未等固體污垢。另外,泡沫有時(shí)可以作為洗滌液是否有效的一個(gè)標(biāo)志,因?yàn)橹拘杂臀蹖?duì)洗滌液的泡沫有抑制作用,當(dāng)油污過(guò)多﹑洗滌劑量少時(shí),就不會(huì)有泡沫生成,或使原來(lái)的泡沫消失。泡沫有時(shí)還可以作為漂洗是否干凈的指示劑,因?yàn)槠匆褐信菽客S洗滌劑含量的減少而減少,因此可以泡沫量的多少來(lái)評(píng)價(jià)漂洗的程度。
9、洗滌過(guò)程
從廣義上講,洗滌是從被洗滌對(duì)象中除去不需要的成分并達(dá)到某種目的的過(guò)程。通常意義的洗滌是指從載體表面去除污垢的過(guò)程。在洗滌時(shí),通過(guò)一些化學(xué)物質(zhì)(如洗滌劑等)的作用以減弱或消除污垢與載體之間的相互作用,使污垢與載體的結(jié)合轉(zhuǎn)變?yōu)槲酃概c洗滌劑的結(jié)合,最終使污垢與載體脫離,因被洗滌對(duì)象和要清除的污垢是多種多樣的,因此洗滌是一個(gè)十分復(fù)雜的過(guò)程,洗滌作用的基本過(guò)程可用如下簡(jiǎn)單關(guān)系表示

洗滌過(guò)程通常可分為兩個(gè)階段:一是在洗滌劑的作用下,污垢與其載體分離;二是脫離的污垢被分散﹑懸浮于介質(zhì)中。洗滌過(guò)程是一個(gè)可逆過(guò)程,分散﹑懸浮于介質(zhì)中的污垢也有可能從介質(zhì)中重新沉淀到被洗物上。因此,一種優(yōu)良的洗滌劑除了具有使污垢脫離載體的能力外,還應(yīng)有較好的分散和懸浮污垢﹑防止污垢再沉積的能力。
